Anyone who ends up being the one to cooks the Thanksgiviing dinner can tell you how exhausting it can be, whether you have a big or small family to feed. Between figuring all of the things that need to be done and making the meal preparation, it can be exhausting. So sometimes it's best to keep it simple, and make a dish that everyone will love, especially the cook.While we all enjoy so many of the holiday dishes, my family never tires of enjoying the turkey leftovers during the week. Along the way I got a bit creative and made a special dish just for them. It's so popular, we now call it my Day-after-casa-roll, even when it's not made with leftovers! When it comes to cooking and coming up with new things to serve your family, you just have to get creative sometimes!There are many times I don't have time to make an entire turkey, and won't be home the entire 4 or 5 yours it will take for it to cook. So sometimes, I "cheat" and purcahse pre-cooked turkey breasts to start the dish. They are a little more expensive than doing it yourself, but I think the time saved is well worth the money. And the fact that the turkey is cooked but cold makes this dish easier to make in the long run. I pull all the turkey off the bone and shred it with a fork. A 3-4 pound turkey breast will easily feed 5 people.What I next do is prepare some stuffing, usually cornbread. I either use the bagged or instant boxed kind, because it's so simple and quick to make for this recipe. I usually use 2 boxes and double the required ingredients. After it's cooked, I fluff it up and set it aside to cool. Once it's cooled, I layer it on the bottom of a greased, glass casserole dish. Then I take the turkey and layer it over the top of the stuffing, spreading it out as evenly as possible.Spread a layer of jarred or canned gravy over top of the mixture and place in the oven at 350 degrees for 25 minutes. Check this occasionally because the gravy has a tendency to bubble over the top of the dish. At the same time, you can place the refrigerator biscuits or rolls in the oven to bake. Once they are browned, set them aside to cool, leaving the casserole in the oven. Cut each biscuit in half and "butter" each roll with mayonnaise on one side and jellied cranberries on the other.Now the casserole is finished, so I'll take a spatula and use it to cut the dish into smallish segments that will fit on onto the rolls or biscuits. Then I make delicious individual casserole sandwiches, serving at least 2 to each person. Without fail, my family's eyes light up when I serve this meal. It's actually one of their favorite dishes.This meal can be adapted to any family's taste - even vegetarians! Now I mix it up sometimes by adding carrots or peas to add some new flavor and for nutrition. My sister makes it with mashed potatoes and sometimes yams too, for a different yummy taste. There's lots of creative ways you can cook up a fun casserole your family is sure to enjoy - it's limited only by your imagination!
